Pudina Rice:

      Pudhina (Mint )Rice:

Basmati Rice 1 cup.
Water 1.5 cup.
2 onion finely sliced.
1 Tomato 2 no(chopped).
2 tbsp Ginger garlic paste.
Cinnamon 1 stick.
Cardamom 1 no.
Bay leaves 1.
Cloves 2 no.
Red chilly powder 1/2  tbsp.
Mint(Pudhina) Leaves 1/2 cup chopped.
Ghee or Butter 4 tbsp.
Salt to taste.

     Make a Paste:


 Mint(Pudhina) Leaves  1  cup chopped.
Small Onion 5  no.
Green chilly 3 no.(adjust)
Fry the above ingredients with one tbsp of oil .
Grind it in the mixer grinder.



            Method:
First soak the rice in water for about half an hour.
Heat ghee in a  deep pan  .Add cinnamon,cloves,bay leaves,cardamom to the heated ghee.
Saute them for few seconds and then add the sliced onion.
Fry until the onion turn in to pink colour.
Now add the gingergarlic paste ,saute for few seconds.
Add the chopped tomatoes,sprinkle little salt.it helps tomatoes to cook fast.
Fry till the tomatoes become soft.
Now add the pudina paste and cook for 4 to 5 minutes.
Now pour 1.5 cup of water in the mixture.
Bring the water to boil ,add rice and salt
Mix well and pressure cook it for 5 minutes after first whistle.
Serve hot with Raita.
